You don't cook deviled eggs, you boil the eggs until the yolks are cooked all the way through, about 10 mins in boiling water. If you cook them too long they will turn dark on the exterior of the yolk. After you have boiled them, place them in cold water to cool (before you peel the shell off the egg).

First you need to hard-boil the eggs. Put them in a pot, add salt to prevent the whites leaking out if the shells happen to crack, bring it to a boil, then remove from the heat and let sit covered for 20 min. After that you drain the pan and fill with cold water to stop the eggs from cooking any farther and to make them easier to peel. When they're cool, peel them, split them in half lengthwise, scoop out the yolks into a bowl, and mix with mayo, salt and pepper, plus add anything you like: mustard, onion, celery, pickles, etc. Mix thoroughly and spoon the filling back into the egg whites, and sprinkle with paprika. Make sure to keep them refrigerated.

Deviled eggs are made from hard boiled eggs. 7 minutes in boiling water.
Frankly, you can boil them until doomsday as long as the water doesn't boil away.
Peel, cut in half lengthwise, pull the yolks out with a spoon. Mix with mayo, pickle relish, a little mustard, a little paprika, vinegar.
Spoon back into egg whites. Top with a sprinkle of paprika.

It only take 18 minutes to cook boiled eggs.
Preparation:
Place eggs in a pot of cold water(enough water to cover the eggs). Place a lid on pot. Cook eggs on highest setting. Once eggs start to boil, set your timer for 18 minutes.
Once done, run cold water in the pot until cool to touch and start cracking your eggs (but do not peel them at this point) place them back in the cool water until you have cracked all your eggs. Then start peeling your eggs, they should be very very easy to peel without splitting or tearing. Have fun !!!!

I've had the best luck, bringing the water to boil, cover and turn the heat off. Leave them for about 20-30 minutes, they peel better for me this way. I think if you leave them in a rolling boil for 15 min, it's too long and won't peel well.
