United is having a "sale" with travel between early January and early March. I found RT out of the NW for under $400.
The slowest time is right after Thanksgiving. However if you book now there probably will not be the discount that will show up in the early fall when it is obvious no one is going. Late September and October can be slow.
Christmas, Spring breaks, Ski weeks, Washington's birthday and early summer are usually the periods with no "discounting" or "sales". From the West Coast $500 - $600 is a good acceptable average for flights to Hawaii, Maui or Kauai. Below $500 is great and you should grab it. $700 and over; only if you really want to go on those dates. Honolulu should be about $75 less than to the other islands.
As mentioned above, even after you buy a ticket keep going back and repricing your itinerary. If it drops below what you paid the airline should issue you credit for the difference to be used for future travel.

It all depends on where you're flying from, of course. Flying to Hawaii from the west coast (L.A., Seattle, San Francisco, Portland) is a lot less expensive than flying from Denver, Houston, Chicago...etc. You can get inexpensive flights but you have to keep checking the airlines' websites. I have found that it's usually cheapest to go directly through the airline rather than a "discount" website like Expedia or Travelocity. I live in Hawaii and my son's father visits us every six weeks, so he is sort of a Hawaii travel expert! He came here last Thanksgiving for $307 round trip from LAX with no stop in Honolulu! That was a record fare for him, but he still usually gets them for under $500 RT.

Generally, October is the least expensive month. But, right now Hawaiian Airlines is offering $119 each way from the West Coast. Hello! That is DIRT cheap ... plus you actually get a hot meal on Hawaiian.

Depends on the airline, but usually spring and fall are the least expensive. Summer travel hits summer holidays, school vacations etc, so it's costly and winter travel (Christmas and New Year's especially) is VERY expensisve.
