It wasn't done. Put it back in the oven. I was putting the soda pop and sugar mixture on it, after I cut it to see if it was done. It's been in the oven 10 hrs. Now, when I cut into it, the meat toward the bone is dark brown, doesn't look good. Don't know if that's from the pop/sugar mixture or not. I tasted a piece from the outside, and it was bland, not salty or sweet. Could this meat be bad? Expiration date was Jan 12, 2007. I have it just sitting there, don't know what to do with it. Thanks for any help given.

Picnic hams are not an expensive ham and they will have various colors of pink in them so you seeing darker meat next to lighter meat is perfectly normal for a picnic ham. Also, most hams, I believe are basically already cooked, all we are doing is heating them up.

What made you think it wasn't done after 5 hrs ????

Did you use a meat thermometer...or just guess by looking at it?.....cuz it is a HAM...and will look pinkish even if its done! Anyway, if its now dark brown at the bone...that part is probably almost burnt there (when it gets really really hot and over done, the bone helps cook it)

But now 10 hrs...I dont know...thats an awfuly long time for it to be cooking. If the meat was bad, it wouln't have anything to do with the exprireation date...it was still over two weeks away.

Are you sure your oven is working right and reaching the temp you set it at? If not it may not be safe to eat

Please spend a few dollars ( maybe ten bucks) and buy yourself a meat thermomenter so this doesnt happen again...it will help you know when your roasts, hams and turkeys ect are done...this is the safest thing especially if you are still learning

It sounds to me like you had it set at either the wrong temperature or perhaps your oven isn't working properly. That has happened to me before, when my stove went out. I had it set at 375 and it was only heating to about 250. I doubt that anything is wrong with the ham. Ham actually has a pretty long shelf life, as it is naturally very salty. But you may have drained the life out of it by adding all that pop and sugar and letting it soak so long. Not sure what else to tell you, accept you might want to try just cutting it into slices and frying it. That might help pull out some of the natural flavor again. And as soon as you get a chance, pick up an oven thermometer, and test your oven. It sounds like this could be the culprit.

I'm not going to be a lot of help. However, for future reference, you can't always tell if meat is done by looking at it. You need a meat thermometer. The internal temperature of a cooked ham should be 135 degrees F. Let it sit for 15 minutes before serving, and the temperature should have risen to 140 F.

Back to your ham, I think it is probably a bit over done. Although they can bake from 5 to 8 hours without a real problem.

You have a pork shoulder. They are much more bland than hams.

Your meat should've been more than done. My advice is, whenever in doubt, don't eat it, especially with meats like pig. I don't understand why there was soda put onto it, I've never heard of any recipe calling for that. I would talk to your local grocer's meat department or your butcher about how to properly cook the meats they sell. Most will be more than happy to offer a little advice, and if they aren't, they don't deserve your business. Most meats cook by temperature, like turkey and chickens too, so get yourself a meat thermometer and make sure you know how to use it before you need it.

25 minutes/lb would be 250 minutes or 4:10.  If anything, you overcooked it... IF your oven thermostat is okay.

Is it?  Do other things cook in a reasonable time?

If the meat doesn't have any off-odors or flavors, it's probably okay.  I'd just worry that your oven wasn't set right to cook it properly - ten hours should have left it mighty dry!
