Hi Trevor! Frozen vegetables are actually as healthy or healthier than fresh vegetables. All vegetables lose vitamins, minerals, and nutrients as time elapses from when they're picked, unless you can halt the loss of such vitamins, etc. Canning actually boils out vitamins, etc. and refrigeration still allows the same vitamins, etc. to be lost, but it does slow the ripening process. Flash freezing severely retards that same loss of vitamins, etc. and seals in the goodness! Normally produce is picked and goes either to market/stores, canners, or frozen food processors. In the amount of time it takes produce to get to a market/store it can be flash frozen below 0 degrees. At that point loss of all vitamins, etc. occurs at a rate far less than fresh veggies. You can have that frozen veggie next week or next month and it still has relatively the same amount of vitamins, etc. as it did when it was frozen. I hope that helps!

Frozen yes. Canned no. Canned are really gross too. Frozen stuff you can still cook a little el dante if you like them that way. canned things turn color and are soggy I think. Canned Green vegetables are this nasty dark color where as frozen veggies are the same color as fresh ones. I freeze fresh berry's which work well for treats throughout the winter but the frozen fruits at the store are usually in a syrupy sauce (yuk!).

According to a news program I watched a while back, most of the time frozen vegetables are BETTER for you than fresh because they are frozen as soon as they are picked versus the fact that it might take fresh vegetables several days to actually get to you and lose some nutiritional value.

Actually, frozen is BETTER than fresh. It freezes the nutrients in quickly after picking. If you buy fresh veggies at the store, the longer the time since they've been picked, the more nutrients they lose.

Yes, they are. I read that vegetables which are flash frozen do not lose any nutrient content in the process. Stock up and eat away.

The fresher something is the more nutrients it has. Freezing will certainly destroy some nutrients, but frozen is still better than canned.

No. Nothing is as nutritional as the raw vegetables. Freezing and cooking will destroy some vitamins. If you cook vegetables, it is best to "steam" them. You lose the least amount of vitamins this way.
