It's not hard.
First, look at the nutritional labels on the backs of your food. The calorie content will be there. You also need to pay attention to serving sizes. Quite often, one container of food or drink has more than one serving inside. An example is those 20 oz bottles of Coke. That counts for about 2.5 servings, if I'm not mistaken.
Second, you can go to websites or get a calorie counter book. These resources have the calorie counts for almost every food item around.
Ask your trainer how many calories you should be taking in per day, and then use your research to construct menus for yourself.

If you are eating prepared foods (frozen or canned or packaged) then the calories and the carbs per serving must be listed on the package. Jot them down or put them into a Spreadsheet on your computer with totalizers and the name of the food and the date you ate them.
As far as anything else like pieces of fruit, jot them down too and then go look up their calories and carbs on the internet to fill them in too. Unless you are going to eat an incredible variety of fruits and vegetables a few days of lookups should cover that part of your food.
Before you see the trainer print out your chart to bring along.

Yep, it's simple, no worries! :)
Write down everything you eat...snacks, little handfuls of candy, etc. EVERYTHING! Little things add up. Now, to figure out the calories... you can buy a cd such as diet analysis, but i only did that because i am a nutrition major, so a free option for you, i'd suggest using www.mypyramidtracker.gov , you can put your age, height, weight (goal weight if you want), gender, etc... then you look up foods and plug them in-- it will bring up ALL the calories, carbs, fat, sugar, fiber, vitamins, minerals, water, etc. There is also a section to put your physical activity in to balance the calories. It's pretty cool. Good luck
