~~~Making suchi for the first time. Will buy seaweed from local market, but its dried. How do I prepare it so it will roll properly?

But if the Nori is dried, wont it crumble while rolling? I thought it had to be dampened?

The nori sheets can be used just as they are from the package. The small amount of moisture in the rice and fillings will be sufficient for rolling--- but you will need to moisten the edges very slightly with water on your finger so the ends stick together.
You can use a sushi mat for rolling them, or some Asian markets sell 'sushi kits' which have molds of various shapes which you fill and then press down the rice etc. to form a perfect sushi with very little effort.
Try vegetarian ones, too, with avocado, thin strips of tofu, and various other veggies. Very yummy!

Nori comes plain and toasted ready for rolling and it also comes flavored and with sugar and spices. Don’t make the mistake of buying nori that’s artificially flavored. The nori used for sushi usually comes in large, square sheets. The seasoned nori is usually packaged in small containers; you can also tell the seasoned kind by the labels. The more cartoon characters there are on the package, the more likely the seaweed you buy is shellacked with MSG.

The darker and shinier the seaweed, the greater the flavor. Nori is used mainly to wrap rice and is also crumbled or shredded to use as a garnish for soups and soba noodles. You can also bring out the flavor of nori by toasting it quickly on both sides by holding the sheet over a low heat. This process will only take a couple of seconds, so be careful not to scorch the seaweed. The best thing about nori is that it will keep indefinitely if kept airtight, dry and away from moisture.

cover your sushi mat with plastic wrap, place the nori on the plastic wrap and put a cup of sushi rice on top.
place other ingredients on top, hold the plastic wrap with your thumbs, lift the nori and roll the sushi away from you . Make sure that the rice sticks together. tighten the roll with your sushi mat often.when you slice it use a wet, very sharp knife.


spider rolls are good and spicy tuna. !!!!

You don't. It wont crumble if you're using seaweed mats.
