Haha, I love your question. I am both French and Vegetarian, so what a funny coincidence. I don't know any specific vegetarians in Paris, so good luck with that one. Keep in mind that in France, people aren't as open to vegetarians as we are in America. Here in the U.S, we can find many vegetarian dishes, even if it's just a plain fruit bowl. But as for specific food choices, I can recommend you some meatless foods. (If you're a vegan, life in France will be horrible, LOL. You'll be looked at like an alien, because meat and cheese is a staple food.)
Try a:
* Omelette
* Quiche
* Crepe
* Sandwiche au fromage
* Croque monsieur( Sans jambon!)

There are some, but nice restaurants are few and far between, unless you are of eating nothing but salads and cheese.
If you have the money, Maison Blanche is known for their vegetarian dishes. But, they aren't cheap. Lenotre on Champs Elysess also has several dishes that are veggie friendly. Other than that, it's hard. We ended up at Italian places so that we could have pizza and pasta. Findi on George V was actually quite good and then downstairs dining room is GORGEOUS!! Most sandwich shops will have a cheese or greek sandwich that is meat free, so that can always be a great place for meals. And, surprisingly enough, the Louvre food court is loaded with vegetarian options from all around the world. It's still food court food, but it will do in a bind.
Remember that quiches may have a lard based crust and bacon fat, grease, or bits in them. I'd avoid them if you are a true vegetarian, or unless you can speak perfect French. Many cream sauces will also have a meat based demi-glace. So also beware of them.
