Basic Marinara Sauce
INGREDIENTS
1/2 or 1/4 Diced White Onion
15-ounce can of crushed tomatoes
Exta Virgin Olive Oil
Fresh Basil Leaves
Salt & Pepper
Oregano
This is called basic marinara sauce, because it can be used for so many other dishes, including the base of other sauces as well. No garlic here, the onions are what makes marinara sauce sweet.
In a sauce pan, pour in some olive oil, a tablespoon or more... and add the diced onions. Continue to sautee until the onions become clearer in color and slightly yellowish (do not burn!). Add the can of tomatoes, and stir every few minutes. Add in seasonings such as oregano, salt, pepper and/or some fresh basil leaves. This sauce should be ready in 20-30 minutes. This can be served with your favorite pasta, penne rigata works well also. If you made a lot of this, put it aside use in other recipes (chicken parmesan for example) This recipe should be able to serve at least 4.

Spaghetti Sauce and Meatballs
Who doesn’t love a Saturday night meal of good ol’ spaghetti and meatballs? The secret to the sauce lies in the flavorful meatballs made with 3 kinds of meat.
Serves 8
3 (23-ounce) cans good-quality tomato sauce
1 (5.5-ounce) cans tomato paste
1 onion, finely chopped
1 green pepper, finely chopped
1 clove garlic, minced
2 tablespoons Italian seasoning
1/2 teaspoon pepper
1/2 teaspoon salt
1/3 pound ground beef
1/3 pound ground veal
1/3 pound ground pork
1 egg
1/4 cup Italian-style bread crumbs
1/4 cup fresh-grated Parmesan cheese
Combine the tomato sauce, tomato paste, onion, pepper, garlic, Italian seasoning, pepper and salt in the slow cooker.
In a large bowl, combine the beef, veal, pork, egg, bread crumbs and Parmesan; form into balls.
Transfer the meatballs to the slow cooker.
Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours.

Its easy to make homemade spaghetti sauce. Take an onion and chop it fine. Saute the onion in some olive oil until soft and translucent. Add two chicken bouillon cubes and 2 - 4 cans of whole tomatoes (depends on how much sauce you want to make). Cook on medium heat until sauce is reduced to desired thickness. You need to stir it occasionally and watch it to make sure it doesn't burn. This is especially true as the volume is reduced. Add some black pepper, oregano and minced garlic towards the end. Amounts depend on your taste. Good Luck.

1 (7 lb) can tomato sauce
2-3 lbs hamburger
onions
red peppers
green peppers
3 tablespoons italian seasoning
2 tablespoons garlic (1 TBSP if using Fresh)
2 cups chopped tomatoes
1/2 cup molasses
1/2 cup brown sugar
fresh basil or dried basil (add to your liking)
1. Put tomato sauce in large stock pot 8quarts or larger.
2. Brown hamburger, drain (I like using paper towels to pat grease out as much as possible).
3. Add to pot.
4. KEEP grease.
5. In grease from hamburger, cook onion, green and red peppers until tender.
6. I like them browned.
7. Add to pot.
8. Start simmering Sauce in the stock pot.
9. Now add the remaining ingredients.
10. Let simmer on low heat at least an hour (or longer).
11. Stirring occasionally.
12. I usually divide this into 1 quart containers and freeze until ready to use.
13. I usually have 6 quarts to freeze.
14. I usually thaw in microwave a bit them simmer more while cooking spaghetti.
