The Best Rolled Sugar Cookies

"Whenever you make these cookies for someone, be sure to bring along several copies of the recipe! You will be asked for it, I promise!!! NOTE: I make icing with confectioners' sugar and milk. I make it fairly thin, as I 'paint' the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off."

INGREDIENTS
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
DIRECTIONS
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven.
Best White Icing Ever

"This icing recipe is #1! It's quick and easy to make, bright white for cake decorating, and you can easily change it's consistency! This is the most important icing recipe you'll ever have. It's so basic, it makes the hassle of cake decorating so much easier! If you wish, use half shortening and half unsalted butter."

INGREDIENTS
4 cups confectioners' sugar
1 cup shortening
2 tablespoons water
1 teaspoon clear imitation vanilla extract
DIRECTIONS
In a large bowl, combine sugar, shortening, water and vanilla. Beat on low speed to combine, then beat on medium speed for a full five minutes. It won't look like Icing at first, but keep the mixer going for a full five minutes, and then you're done!
Note: If you're not using this for decorating, but just for icing the cake, thin the icing by adding 3 tbs. of corn syrup, or water to the icing.

I get most of my recipes off the Internet. Just search for whatever flavor you're looking for. I make most of my cookies from scratch, but my husband brought home some sugar cookies shaped like Santa. I bought some white icing and some red sugar, and took them to a Church potluck. I never got so many compliments on anything I've brought there! But I usually just take my homemade goodies to family and friends.

sugar cookie with icing!!!
Cookie Dough
1 cup margarine
2 cups sugar
1 teaspoon vanilla flavoring
2 eggs, beaten
4 cups flour
1/2 teaspoon salt
Buttery Icing
3 cups powdered sugar
1/3 cup softenend margarine or butter
2 tablespoons milk
1 1/2 teaspoons vanilla
food coloring
Cookie dough: Combine flour and salt in a bowl and set aside. In a separate bowl, mix margarine, 1 cup sugar and vanilla. Add remaining sugar and eggs, and beat. Continue to beat on low speed while slowly pouring in flour mixture. Chill thoroughly. Roll dough to 1/8 -1/4 inch thickness, cutting into desired shapes. Place on cookie sheets and bake 8 - 10 minutes in oven preheated to 400 deg F. These brown on the edges, so watch not to burn, it may take less the 8 minutes. Let cookies cool before decorating.
Icing: Blend margarine and sugar. Add milk and vanilla mixing until smooth. Add food coloring as desired. After decorating allow icing to set before stacking cookies. This recipe may yield 6 dozen cookies, this depends on the size of your cutters. Preparation time does not include the chilling time.

these are the recipes I used this year
sugar cookies
INGREDIENTS
1 1/2 cups confectioners' sugar
1 cup butter
1 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/3 cup granulated sugar for decoration
DIRECTIONS
Mix confectioners' sugar, butter or margarine, egg, vanilla and almond extract. Stir in flour, baking soda and cream of tartar.
Roll into big ball and wrap in plastic wrap and let chill for at least 3 hours.
Preheat oven to 375 degrees F (190 degrees C).
Divide dough into halves. Roll each half 3/16 inch thick on lightly floured board. Cut desired shapes with 2 to 2 1/2 inch cookie cutters. Sprinkle with granulated sugar. Place on lightly greased cookie sheets. Bake until edges are a light brown, 6 - 8 minutes.
sugar cookie icing
INGREDIENTS
1 cup confectioners' sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract
assorted food coloring
DIRECTIONS
In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.

Regular Royal Icing doesn't usually have eggs and milk. I would find a recipe that doesn't call for those just to be on the safe side. I do use egg whites in my icing, but some people use water instead of milk. Not the whole egg, that I've heard of.
