Sandwiches are a great way to use leftovers from the holidays. My favorite thing to do, though, is to make a panini, an italian sandwich. For this some good bread works best, like sourdough, or rosemary. Then use a panini press to make the sandwich. If you don't have a panini press, then put the sandwich in a frying pan, after buttering the outsides of the bread. Then, use a heavy pot or pan to weigh the sandwich down. Really squish it! Flip the sandwich over and let it heat up for a minute, then enjoy. And be creative with your sandwiches: use avocadoes, grilled onions, various kinds of cheeses, etc.

We love to eat the left overs for themselves. Both of our surviving mothers are 96 and 97 years old, so the traditional "tasting" Christmas has been gone for several years now. We've captured some of the tastes of the past, but not all. You know how that is: no one can cook as well as your mother and grandmothers, etc.
When left overs are "recycled" it is usually in sandwiches, soups, pot pies, roll-ups, and salads.

Huge turkey sandwiches. With Gravy instead of mayo. I invite all my friend an give them as much food as possible to clear the left overs.

I like to make hot turkey sandwiches, with buttered bread, warmed up turkey and gravy served with a massive side of french fries...this is incredibly fattening but once a year is not going to kill you...
I also make some turkey fried rice, with chopped onions, green pepper and other veggies with turkey and rice, fried in a big wok pan...
turkey hash is good for all the leftover bit of potatoes, squash, sweet potatoes and veggies fried up with some turkey
then I boil the rack of bones and make a big old turkey soup...

My absolute favorite is a "thanksgiving sandwich"--use squishy white bread with a little mayo, add sliced turkey, cranberry jelly, and stuffing. Enjoy!
I also make soup with the carcass; it's my family's favorite, but not mine.

I actually like to make wraps. Spread the tortilla with cold mashed potatoes, add turkey, stuffing, cranberry sauce/salad, and corn. Wrap it up and get ready for the best tasting wrap you've ever had. I know- it sounds gross- but it's fantastic and you don't have to heat up any of it.

turkey ala king....
on toast.
lots of diced turkey
can of cream of mushroom soup
drained can of baby peas
a pinch of salt and pepper
heat it up
put it on toast
you'll love it!
