Barbados is fantastic. It's approaching their rainy season, so is quite a bit less expensive. Great scenery, loads to do or not do, very friendly people, plenty sunshine and heat. Don't worry about the rainy season, it only rains for a short time and is like being in a warm shower. If you're on the beach it's very nice, you don't need to move. When the rain stops everywhere dries up very quickly.

Try the Algarve. The weather will be lovely and hot and there are some beautiful places to visit and the beaches are great.
Plus its not such a long flight either.

The weather on the Costa del Sol will be lovely in May and it will still be fairly quiet.
