Cracker Barrel Hashbrown Casserole
Yield: 4 Servings

Ingredients

4 lg baking potatoes; * see note
1 lg onion; **see note
salt and pepper; to taste
2 lb colby cheese, lowfat;
-shredded
10 oz cream of chicken soup;
-low-fat

Instructions

Coarsely grate potatoes (I use frozen hash browns). Place in greased
shallow baking dish. Add grated Colby cheese, finely diced onion, can
of soup, salt and pepper. Mix gently. Spread out evenly in dish.
Sprinkle a little of the cheese on top. Bake at 350. If raw potatoes
are used, bake 1 to 1 1/4 hrs.
If frozen potatoes are used, bake for 45 minutes or until golden
brown.

hashbrown casserole!!!


1 (26 ounce) package frozen hash browns
2 cans cream of mushroom soup or cream of chicken soup (small cans)
1 (16 ounce) container sour cream
1 tablespoon milk
2 tablespoons butter
shredded cheese (as much as you like)



Preheat oven to 375.
Mix all ingredients in a casserole 9x13in casserole dish.
Bake at above temp for 40-50 minutes .
Sprinkle extra cheese on top and bake an additional 5 minutes.
Serve hot and enjoy!

2 lbs frozen hash browns
1/2 cup melted margarine
1 can cream of chicken soup
1 pint sour cream
1/2 cup chopped onions
2 cups grated cheddar cheese
1 teaspoon salt
1/4 teaspoon pepper
Mix the above ingredients together and bake in a 11x14 baking dish for 45 minutes at 350 degrees F. or until brown on top.

1 bag frozen country style hash browns
1/2 C. (or so) onion, chopped fine
Jane's crazy mixed-up salt, to taste
1 1/2 - 2 C. Colby cheese, shredded (I love cheese-- but in this case, more is not necessarily better)
1 can cream of chicken soup

Cook hash browns, onions, and season to taste in a skillet. You will need to add a little butter or oil, cook until the hash browns are tender, and brown. Drain the hash browns and set aside. Then mix together cheese and cream of chicken soup in a separate bowl Add hash browns to mixture, then transfer into a buttered 2 qt. casserole dish and cook at 350 for 30 minutes or until golden brown.

Ingredients
1 kg Frozen Hashbrown potatoes
11/4 cups Grated Chesse
1 can Cream of chicken soup
1/2 Onion, chopped
2 cups Sour cream (500g)
Pinch of salt and pepper
Butter
Crushed plain potato chips for topping

Preparation
Preheat oven to 350F. Butter 13 X 8 baking dish. In a large bowl, mix all ingredients. Put into baking dish. Top with Grated chesse and crushed potato chips. Bake for one hour.

Cook's Notes
Leftovers can be frozen - divide into portions with foil. Also you can make day before and put into fridge.

This one is a little different...


"Cottage Potatoes" - 12 to 14 servings

12 large potatoes; peeled and diced
8 oz. process cheese (Velveeta); cubed
1 large onion; finely chopped
1 large green pepper; diced
1 (2 oz.) jar pimentos; drained
1 slice bread; torn
3 tbsp. minced fresh parsley; divided
1/2 tsp. salt
1/2 cup milk
1/2 cup butter; melted
1 1/2 cups cornflakes; crushed

Place potatoes in large saucepan or Dutch oven and cover with water. Bring to boil; reduce heat to medium. Cover and cook 5-7 minutes or until tender; drain. In a bowl, combine cheese, onion, green pepper, pimentos, bread, 2 tablespoons of the parsley and salt.
In greased shallow 4-quart baking dish, layer a third of the potatoes and a third of the cheese mixture. Repeat layers twice. Pour milk and butter over all; sprinkle with cornflake crumbs. Cover and bake at 350* - 45 minutes. Uncover; bake 10-15 minutes longer or until bubbly and top is golden. Sprinkle with remaining parsley.

you know what,when you make baked potatoes for dinner one night,make extras so that way you can grate them the next day for hashbrowns,they'll be soft and cooked, so all you have to do is brown them.then you can go from there,or you can also chop them,it cuts time cooking in half,since their already cooked,just dont forget to refrigerate them.

1 pkg frozen hb - 1 stisk butter - 1 container sour cream - 1 can cream of chicken soup - 1/2 # velveeta - mix together - bake at 350 till done ! very good !
