The recipe calls for lemon juice, but you don't have lemons. Instead of running to the store, use 1/2 teaspoon of vinegar in place of 1 teaspoon of lemon juice.

Use lime, grapefruit, pineapple or orange juice. Any citrus will do. If you don't have any of those, you can use 1 tsp apple cider vinegar or white distilled vinegar mixed with 5 teaspoons apple juice mixed together. The lemon juice is not just to mix the cornstarch up. It's also an acid used to stop the apples from turning brown so you will need just a bit of acidity to stop that process.

does water and lemon juice taste the same? no.
you can try vinegar, but you might want to get a small thing of lemon juice at the store.

I do not use any lemon juice in my apple pie. Mostly it is used to keep the apples from turning brown, which you can use pineapple juice for that as well. But, I do not use either in my pies, and they are highly requested at family gatherings!
