Hearty Lentil Soup with Ham
1 smoked ham hock
1 pound brown or green lentils, picked over and rinsed
3 cups sliced mushrooms
1 large onion, chopped
1 garlic clove, minced
3 carrots, chopped
3 ribs of celery, chopped
1 teaspoon dried thyme
1 bay leaf4 cups chicken broth
8 cups water
Salt and pepper
3 tablespoons chopped fresh parsley
In a large pot combine all of the ingredients and bring soup to a boil over moderately high heat. Reduce heat and simmer soup, partially covered, for 1 hour. Remove ham hock from soup, remove meat from bone and shred or dice ham. Stir ham into soup and continue to simmer for another 20 minutes. Taste soup and adjust seasoning with salt and pepper. Stir in parsley and serve hot.

The ham bone, if boiled, with some bay leaves and an onion will make a really nice soup stock! You could then make a pea and ham soup! I have divided the left overs up into seperate meals. I will make a ham and mushroom pasta, and I have also cut some slices and left in the fridge for people to pick on. The rest I have frozen and will use some for breakfast with egg, I will more than likely make a casserole too ... putting some ham into a dish, throwing some sort of sauce over and cook in the oven until heated through, serving with potato's and veg!! I am already tired of the sight of ham, so I reckon the freezer will be full for awhile to come. Definately making the soup though!!

I'm in the same boat. I'm trying to find creative, non-boring recipes for the leftover ham. If nothing else, cube it up and freeze it for sometime in the future.
As far as the ham bone, toss it in split pea soup, bean soup, or toss it in the freezer and save it for NYDay to make Hoppin' John!

Ham and parsley sauce with some boiled spuds.
Mmmmm
The parsley sauce - Make a rue on the hob with melted butter and plain four... then slowly add milk whilst whisking away the lumps... should end up with a double cream consistency... add a bid handful of chopped parsley.
Heat up the Ham and pour the sauce over... Yum

Pork Fried Rice using a packaged rice mix
Ham Pie- one-dish meal is made with leftover ham, sour cream, cream of mushroom soup, and topped with biscuit dough.
Macaroni and Cheese recipe that is perfect with leftover chopped ham:
1 package elbow macaroni
2 cans cream of chicken soup
1/3 cup chopped onion
3 tablespoons pimento
3 tablespoons margarine
4 hard boiled eggs, diced
2 cups edam or cheddar cheece diced or grated ( I used cheddar, grated)
1-2 cups chopped cubed ham
PREPARATION:
Cook macaroni as directed on package, omitting salt. Drain. Combine soup, onion, pimento, eggs and cheese with macaroni in 2 quart casserole dish. Stir in ham. Crumble bread crumbs in butter to garnish top.
Bake 25-30 minutes in 350 oven.

Yes ham is good for soups. You could make home made split pea soup. Buy some dried split peas and follow the directions on the package.
Also I like to fry it up a tiny bit and add it to scrambled eggs.

Irish Potato Soup with Bacon and Vegetables
900g (2lb) Potatoes, peeled and diced
900ml (1½ pint) Chicken or Vegetable Stock
300ml (½ pint) Cream or Cream and Milk
85g (3oz) Smoked Bacon
2 Medium Carrots, diced
6 tsp Butter
1 Leek, cut lengthways, sliced
1 Onion, diced
1 Spring Onion, cut into strips
¼ Head Celeriac, diced
Pinch Ground Nutmeg
Salt and Pepper to taste
Croutons
Heat 4 tablespoons of butter in a heavy saucepan
Saute the potatoes, celeriac and carrots.
Cover with the stock, bring to boil and simmer for 40 minutes.
Puree half the soup by passing it through a sieve or liquidising in a food processor and return to the saucepan.
Combine with the puree and the rest of the soup.
Heat the remainder of the butter in a frying pan.
Saute the leek and onion lightly and add to soup.
Add the cream, season with nutmeg, salt and pepper and cook for five more minutes.
Dice the bacon and fry until golden and crispy.
Serve the soup with croutons, diced bacon and spring onion sprinkled on top.

~Bean soup.Use the ham bone.
~Pasta with sauteed ham cubes, onions, peppers; dress with olive oil, and lots of parmesan
~Hot sandwiches: Mix equal amounts of cubed ham and cubed or grated cheese, a minced hardboiled egg, diced onion, some mayo to bind and about twice as much catsup as mayo. Spread on hamburger buns, put the top on, cover in foil, and bake in 350 oven about 20 minutes until melty. Delicious!
~Scalloped potatoes with ham.
~Use some in omelettes.
~Great in fried rice with carrots, green onions, broccoli, scrambled eggs, and soy sauce.
If you absolutely can't face another ham meal for a while, put it in the freezer for a while--it'll taste great when you haven't had it for a month or so.

With left over ham after Christmas, we just have salads for the next week for dinner and also ham sandwiches.
It goes pretty quickly.
