FREEZING NUTS
To keep nuts like walnuts, almonds and hazelnuts fresh, double bag in tightly sealed freezer bags and place in the freezer.
Most nuts can be kept this way for up to 6 months.
When you are ready to prepare, just pull from the freezer and chop.

I have always put shelled nuts in the freezer and it has worked great for storing them. I haven't ever tried it with unshelled nuts, but I certainly think it's worth a try. Maybe try a small amount for a day or two and then thaw them to see how they do. Good luck.

Nuts freeze well.
I stopped buying unshelled nuts because:
- they just took so long to shell
- Diamond (brand) can shell better than I
- I hated the hard surprise in a baked good that I worked hard on
- I can buy at bulk (Sam's Club / Costco) nearly at the same cost per pound as I would buy unshelled at my local supermarket.
- because shelled nuts freeze so well.
Sure, freeze your unshelled nuts, you won't have a problem.
If they will be used in the next month or so, the Fridge will do also.

you really should shell them first and then freeze them in those little zipper bags. they'll keep a long time. I buy 10 lbs or more of shelled pecans when I go home to the States and then keep them in my freezer in Venezuela where I live the rest of the time. you can't buy them here at all! and they keep fresh for months.

i would think once they thaw out the nuts would be soft and soggy. i wouldn't freeze them. a brown paper bag perhaps or in a ziplock bag stored in the cupboard. good question.
