I'm totally oblivious when it comes to the subject of taxes because I've never worked before. Now that I am employed, how much can I expect to be taxed off every check?

It depends on how much you get paid actually. I usually calculate 23% for state and federal taxes. But it depends on where you fall in the tax brackets.

It depends on how much you make and how many dependants you claim. To be smart, claim "0" so that you get more back at tax filing time
