I will give you the recipe for Hash Browns. Here it is:
You will need
1/4 c. finely chopped onions
1/4 tsp. salt
3 medium potatoes (1 lb.) such as russet or yellow
3 tbsp. butter
skillets
1/8 tsp. black pepper

This is how you make it
1.Peel potatoes and coarsely shred them. You should have about 3 cups.
2.Rinse the shredded potatoes and pat dry well with paper towels - or dry in a salad-spinner.
3.Combine the potatoes, onion, salt and pepper.
4.Melt butter in a large skillet over medium heat.
5.Using a spatula, pat potato mixture into skillet, reduce heat to medium-low, and cook about 10 minutes or until bottom is crisp.
6.Cut into 4 wedges and turn. Cook another 8 to 10 minutes or until golden and the potatoes are cooked. Serve.

I hoped you like the recipe and it is so good, I had it for breakfast this morning!

Use a cheese grater - wash the potatoes and there is no need to peel - then after you have grated the desired amount rinse thoroughly in cold running water to reduce starch and improve color and flavor of the finished product. Chunked or cubed potatoes would be cottage potatoes.

Usually either a small dice, or shredded.

"Hashed Brown Potatoes" - 6 servings

1/4 cup bacon drippings or salad oil
8 medium potatoes; cooked, peeled and diced
1 onion; finely chopped
1 tsp. salt
1/8 tsp. pepper

1) In 10" skillet over medium-high heat, heat drippings. Add potatoes to skillet; press down firmly with spatula. Sprinkle with onion, salt and pepper; reduce heat to medium. Cook until golden on bottom, pressing down potato mixture occasionally.
2) With spatula, turn potatoes about 1/4 at a time; press down. Cook until golden, turning as necessary.

The best way to do so is to use a gratter. First you should wash the potatoes and then peel them. Then simply grate them. You may want to chop up some onions as well and carmalize them when making your hash browns.

I use a food processor to grate the potatoes. Peel them first obviously. You must get the moisture out if you want them to be crispy. You can drain them in a colander and then pat dry with paper towels. Just make sure they're as dry as possible!!

Hash browns are generally made from leftover cooked potatoes...either boiled or baked...then run them through a grater and away you go!.....using raw potatoes can lead to a gooey gluey mess if not careful

I like to peel them first
then cut them into fours
cut up some onions and boil them for about 10 minutes take them out and bake them until they are crispy on the top
season with salt and pepper

If you don't have a Food Processor use a Box Grater, rinse them good and squeeze them dry
