veal is young cow that is raised in a very specific way to promote tenderness. the animal is put in a very, very small cage and not allowed to move so the muscles will be soft. also, it is only allowed to drink milk, even after the animal should have been weened. this is why so many people are against veal, because they consider it cruel. others call it tasty! that's up to you. lamb is young sheep, no cruelty involved. older sheep are called mutton. i'm sure you've heard of mutton chops, both for facial hair and dinner. hope i helped some!

There is a bone in sheep near the hock area that when they are fully mature is called the spool bone because it looks like a spool from a spool of thread. When this bone has turned into the spool the meat is then considered mutton which is a full grown sheep. With that being said anything that doens't have this yet usually under 12 mo. of age is considered lamb.

there is no generic word that i know of to describe the meat from a young lamb. a "milk fed lamb" cut of meat is from a very young lamb, around 4 to 6 weeks old.
