I wanted to serve a white merlot with dinner tonight. I am new to drinking wines and still don't know a lot about it. Should I chill this white merlot, and will it mix well with a light chicken pasta?

I would, not not icy cold. Serve it in medium-sized glasses. This is a good choice with chicken or seafood. If you are making a hearty dish like roast chicken with potatoes or seafood lasagne, I suggest a red, actually. For pasta dishes, go with a sauvignon blanc. Stay away from Italian whites, too dry.

First off, unlike what some people have told you, White Merlot does exist. Obviously, since you have one in your hands, you know this. For your own general information, all wines are white until the winemaker puts the red skins from red grapes into the tank so give it colour. Since I'm not sure which winery's White Merlot you have I can't say for certain but it should go very well with the pasta. As for chilling it, I would recommend putting it into a fridge for around 30 minutes, no more than 45 minutes, to just slightly chill it. You don't want it in there for days because then it will close up the wine and you won't get the true experience.

Technically there is a white merlot. The difference is the grape juice is left in contact with the red skin for a very short amount of time, like hours or days, in compared to the red merlot where the juice is in contact with the skin for weeks or months.

Anyway, serve it chilled.

white merlot is made under the same concept as white zinfandel. only difference is the grape used. basically a blush wine created by leaving the grape juice in contact with the skins for approximately 3 hours. this gives the wine, be it white zin, white merlot, white cab (yes they make one with cab sauv too) its nice rosey color.

White Zin pioneered by Sutter Home in Napa. White Merlot in France. you should serve it chilled as you would White Zin. Sutter Home website suggests serving with things like bbq, seafood, poultry, and spicy ethnic foods.

so it may go well with the pasta you are planning. Although ordinarily with a light pasta dish I would have pinot grigio or sauvignon blanc.

I don't chill any wines usually, some I do later....what I would do is buy 2 kinds and open both to taste them with your friends and decide then...you can always put one the the frig (or outside on the door step for a few minutes) ...wine needs to air out anyway...and it certainly doesn't need to be cold, just chilled a bit if at all

Yes..all white wine is better chilled but don't chill red wine.

To be honest, I enjoy all wine chilled. I know most reds are supposed to be room temp. I can drink it room temp, but it is also nice chilled. Do whatever you want.

yES!. white wine is best chilled. And yes to the chicken, unless you are pairing it with a marinara sauce...then I would opt for a red wine.
