great recipe for a real italian calzone
INGREDIENTS
1 (.25 ounce) package active dry yeast
1 cup warm water
1 tablespoon olive oil
1 teaspoon white sugar
1 teaspoon salt
2 1/2 cups all-purpose flour, divided
1 teaspoon olive oil
1/2 cup ricotta cheese
1 1/2 cups shredded Cheddar cheese
1/2 cup diced pepperoni
1/2 cup sliced fresh mushrooms
1 tablespoon dried basil leaves
1 egg, beaten
DIRECTIONS
To Make Dough: In a small bowl, dissolve yeast in water. Add the oil, sugar and salt; mix in 1 cup of the flour until smooth. Gradually stir in the rest of the flour, until dough is smooth and workable. Knead dough on a lightly floured surface for about 5 minutes, or until it is elastic. Lay dough in a bowl containing 1 teaspoon olive oil, then flip the dough, cover and let rise for 40 minutes, or until almost doubled.
To Make Filling: While dough is rising, combine the ricotta cheese, Cheddar cheese, pepperoni, mushrooms and basil leaves in a large bowl. Mix well, cover bowl and refrigerate to chill.
Preheat oven to 375 degrees F (190 degrees C).
When dough is ready, punch it down and separate it into 2 equal parts. Roll parts out into thin circles on a lightly floured surface. Fill each circle with 1/2 of the cheese/meat filling and fold over, securing edges by folding in and pressing with a fork. Brush the top of each calzone with egg and place on a lightly greased cookie sheet.
Bake at 375 degrees F (190 degrees C) for 30 minutes. Serve hot.

calzones homemade!!!!
INGREDIENTS
1 1/4 cups water

3 cups bread flour
1 teaspoon dry milk powder
1 1/2 tablespoons white sugar
2 teaspoons active dry yeast
3/4 cup pizza sauce
4 ounces pepperoni sausage, chopped
1 1/4 cups shredded mozzarella cheese
2 tablespoons butter, melted
DIRECTIONS
Place water, salt, bread flour, dry milk, sugar, and yeast in the pan of the bread machine in the order suggested by the manufacturer. Select Dough cycle.
After cycle ends, roll out dough on a lightly floured surface; shape into a 16 x 10 inch rectangle. Transfer to a lightly greased cookie sheet. In a small bowl, mix together chopped pepperoni and mozzarella. Spoon pizza sauce in a stripe down the center of dough lengthwise; add sausage and cheese filling. Make diagonal cuts 1 1/2 inches apart down each side, cutting within a 1/2 inch of the filling. Criss cross strips over filling, sealing with water. Brush top with melted butter.
Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes.

Super Calzones
45 min 20 min prep
4 calzones
Ingredients:
1/2 lb ground beef
1 (15 ounce) can tomato sauce
1 teaspoon Italian spices
1 (3 ounce) package cream cheese
1 cup mozzarella cheese, shredded
bacon
mushrooms (these are just my 2 favorites, but use whatever toppings you want, there's many more that can be use)
1 (10 ounce) can prepared pizza crust (or one batch any homemade recipe)
Directions:
1.Cook beef until meat is no longer pink; drain and set aside.
2.In saucepan, bring tomato sauce and Italian seasonings to a boil.
3. Stir 1/2 cup into the meat, and keep rest warm.
4. Roll pizza crust into 12-in square, cut into 4 squares.
5. Spread cream cheese over each within 1/2-in of edge.
6. Top with meat mixture.
7. Sprinkle with cheese and toppings of choice.
8. Fold dough into triangle; press edges with a fork to seal.
9. Place on greased baking sheet and bake at 400 for 20-25 minutes.
10. Serve with the remaining sauce.

Baja Pizza Pouches (Calzones) with Wisconsin Cheese
Category: Pizza
Number of Servings: 8
Ingredients:
1 pound bulk hot pork sausage
1/2 pound lean ground beef
1 can (12 ounces) refried beans
1 teaspoon cumin
1/4 teaspoon garlic powder
1 package (16 ounces) hot roll mix
1 can (14 1/2 ounces) crushed Italian flavored tomatoes
2 cups (8 ounces) shredded Wisconsin Monterey Jack cheese
1 cup (4 ounces) shredded Wisconsin Cheddar cheese
butter, melted
1 cup guacamole, if desired
Preparation:
In a fry pan or skillet, brown pork sausage and ground beef. Drain any fat. Add beans, cumin and garlic powder. Heat through.
Meanwhile, prepare hot roll mix according to package directions for pizza crust. Divide dough into eight pieces. Form each piece into a ball. On a lightly floured surface, roll each ball into a 7 to 8 inch circle. Place dough circles on 2 oiled baking sheets.
Place 1/2 cup meat mixture on half the dough circle, to within 1/2 inch of edge. Spoon 2 tablespoons crushed tomato over meat mixture. Top each calzone with 1/4 cup shredded Monterey Jack cheese and 2 tablespoons shredded Cheddar cheese.
Moisten edges of dough with water and fold circles in half. Press edges firmly together with a fork. Brush with melted butter. Bake at 400 degrees F for 18 to 20 minutes or until golden brown. Serve with a side of guacamole.

Take some pizza dough and shape it into an oval, medium-sized. The traditional way to make it is with white Bechamel sauce, grated cheese and a variety of toppings, usually some meat or shrimp and various vegetables. I suggest mushrooms, celery, green peppers and onions. Avoid olives. Roll over, seal sides with oil and an egg baste. Cook in the oven for 30 minutes.

Pesto-Chicken Calzones:
The ultimate after-work, no-fuss meal. Packed with flavor--and vitamins, thanks to the broccoli. Prep and Cook Time: about 45 minutes.
1 pound purchased pizza dough, at room temperature
1 1/3 cups shredded mozzarella cheese
1/2 cup pesto
1 cup cooked chopped broccoli
1 cup shredded cooked chicken (about 4 oz.)
Olive oil
1. Preheat oven to 450°. On a lightly floured surface, divide dough into four equal pieces. Using a lightly floured rolling pin or your hands, roll or stretch each piece into a 6-inch round. If dough shrinks, let it rest about 5 minutes, then roll again.
2. Divide mozzarella among the dough rounds, then top equally with pesto, broccoli, and chicken.
3. Gently pull half of dough over filling to make a half-moon shape. Fold bottom edge over top edge and pinch firmly to seal. Brush calzone tops lightly with olive oil. Transfer to a large baking sheet.
4. Bake calzones on middle rack until golden brown, 20 to 25 minutes (15 to 20 minutes in a convection oven). Let cool about 5 minutes, then transfer to plates.
Note: To make in advance, prepare through step 3, then freeze on a baking sheet. When frozen, wrap each calzone with aluminum foil and keep in freezer for up to 1 month. Bake at 375° for 30 to 35 minutes, until browned and cooked through.
Yield: Makes 4 servings

you can go onto food network .com and pick out a pizza dough recipy rool it out thin fill it with rocatta cheese basil and someother spices fill also with peporini ham mozzerella cheese and a little garlic and fold the edges over and bake at 375 for about 20 min but make sure to vent the top

We use the pillsbury pizza dough in a roll, and roll it out we then fill it with our favorite ingredients (we use basil, sausage, sauce and you always need lots of cheese. Then we cook it about 25 minutes in oven.
