Looking to make some home made stir-fry sauce and the hotter it is the better. I know I can always add peppers and spices to recipes, but they do not always go with certain flavors and I would like some suggestions.

very quick and easy but also great tasting szechwan sauce, you really gotta try it

INGREDIENTS
3 tablespoons olive oil
3 red chile peppers, seeded and finely chopped
2 teaspoons chopped fresh ginger
2 teaspoons minced garlic
5 tablespoons sugar
5 tablespoons ketchup
5 tablespoons vinegar
DIRECTIONS
In a bowl, stir together olive oil, chile peppers, ginger, and garlic. Mix in sugar, ketchup, and vinegar

Dark Sauce For Stir Fry

Ingredients

1/3 c soy sauce
2 c water
2 ts brown sugar
2 tb honey
1 ts ginger -- chopped
1/8 ts white pepper
1 chicken bouillon cube
3 tb cornstarch
1 tb water

Instructions

Mix all together in small saucepan, EXCEPT cornstarch and 1 tb water.
Bring to simmer on low heat. Whisk cornstarch into simmering sauce.
Continue simmering until sauce thickens.Set aside until ready to use.
Makes 2 1/2 cups.

i love oyster sauce for stir fry.. but if like the spicy ones, you can try the garlic-chili sauce or the blackbean-chili.. lee kum kee is a good brand..

try visiting asian grocery stores, they got a lot of them.. a lot to choose from..
