Don't laugh.
Food uses: Grind them up fine and use to flavor coffee grounds in your drip coffee maker or add to cookie dough for a nuttier flavor, or---get this--grind up enough of them to a powder, add to regular flour and make bread out of them.
Feed them, ground up, to goats and donkeys or add to horse feed. Ask your vet first, of course, but I have seen this done.
A good old fashioned coffee grinder with crank handle or a good quality, metal nut grinder will work.
Household use: put them around the base of your indoor or outdoor potted plants to help keep the soil moist after watering them.
Crafts: make necklaces by drilling small holes in them and wiring or stringing them together. Make small "snails" out of them by using clay or play dough to form the snail bodies and plop the shells on their backs to resemble real snails; put them in flower pots as decoration. Put them between a pair of sturdy paper plates stapled or taped together around the circumpherance, to make a kind of maraca out of them--let the kids decorate the plates before sealing them up.

Put them in your nose and blow them out onto your friends. They will love this new game. If you accidentally put one too far into your nostril, you'll have your friends to bring you to the hospital and you wont be on the computer worrying about pistachios shells. That's what we call a win - win situation.

Geesh, you sound like me, I hate to waste anything that could have a second life. I've used pistachio and other nut shells for crafts. I've covered gift box tops and picture frames with them and painted the shells or left them natural. You can crush them or leave them whole and they look cool cup side up or down. They look especially neat when painted gold or silver.

I eat them alot also, so I sprinkle them outside around the plants. the are colorful and they are natural so they don't hurt anything. I have even seen the squirrals munching on them.
