Please don't bother to answer unless you know specifically how Alesci's makes their bread. I already have lots of recipes for italian bread, and don't need a bunch more. Just one--Alesci's.

I live outside of Cleveland, Alesci's does have great bread! All I could find was their website(s) Maybe you could ask them (not that they would divulge there secrets, but you might find an unfaithful employee.

2 1/2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Add garlic and tomatoes until evenly distributed. Spread batter into prepared pan. Smooth top, and tap pan on counter to remove bubbles.
Bake for 60 to 65 minutes, until golden. Cool loaf on wire rack.

No, but I know the texture: feathery and doughy, sesame seeds on the egg white wash and baked with a pan of water in the oven. I would guess only white flower and wet dough. Good oil and double proofed and twisted twice.

No, but warm Italian bread right out the oven can knock you out even before you eat it.
