Instant Ice Cream Cake
1 standard 2 layer cake batter, any flavor
1/2 gallon ice cream, any flavor(s)
8 ounces whipped cream or topping
optional toppings or decorations
PREPARATION:
Bake cake according to directions in one 8-inch round cake pan and one 8-inch square pan. Once cool, place round cake layer in the bottom of a similar width mixing bowl. Cut square cake into ladyfinger-sized (2x4 inch) pieces. Press these pieces all along the sides of the bowl and have it meet the bottom round piece. Pinch all the seams together. You should not be able to see any of the bowl.
Put any flavor of your favorite ice cream(s) inside. Be creative, Use Strawberry, Vanilla and Blueberry for the 4th of July, or Strawberry for Christmas and put green food coloring in the whipped cream.
Place plastic wrap directly on top of the ice cream. Freeze. One half hour before serving. Remove cake from bowl. Dip bottom of bowl in warm water if necessary. Ice the cake with the whipped cream. Decorated as desired.

It's too late to make for Christmas but try this for a New Year's treat. It's called a Yule Log. Bake a chocolate cake in a jelly roll type pan--you want it to be fairly thin. After it cools for just a bit, lay it out on a clean dishtowel that you've sprinkled and spread with granulated sugar. Now, starting on a long side, carefully roll the cake into a log, leaving the towel wrapped up in it and let it cool completely. Now set out about half a gallon of peppermint ice cream and let it get soft enough to spread. Unroll the cake, spread the ice cream on it, and re-roll it, but using the towel only to help you roll it up. Transfer to a platter, sprinkle lightly with powdered sugar, and decorate with candy holly leaves and candy berries(or make some with colored frosting.) The cracks that form on the outside of the cake make it look exactly like a log and the powdered sugar looks like snow. It is absolutely stunning! And tastes delicious. Keep in freezer of course.

I've made one before. I baked the cake first, and use the same pan to form the ice cream. This way you know they will be the same size. After the ice cream was set I put the ice cream layer on top but had to trim the sides to make them straight and easier to put the icing on. It's not as difficult as it may sound.

I've had a homemade one before, but it wasn't like the store made. Basically she took a sheet cake, and while it was warm, rolled it (put plastic over it first). This helps it keep its shape. Then when its cool, put the ice cream on the cake and roll back up.
I think your idea would work well. Are you using the chocolate crunchies and fudge in the middle? Cause that's the best part!! :)

Yes, and it was a huge pain in the fanny. In my opinion (and I do a lot of baking) it is easier and much less stressful to buy a premade one. The few extra dollars I saved wasn't worth my sanity.
However, I have seen specialty pans for making ice cream cake. You should check those out if you're really interested in making one!
