Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.
Garlic Chicken Breasts with Brown Sugar
This is so easy and very good!
Tbs oil
6 or more garlic cloves, minced
1 Tbs brown sugar
3 boneless skinless chicken breasts
Preheat the oven to 500F.
Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.
Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.
Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.

I do a super easy baked chicken or fish, takes about three minutes to put together.In the bottom of a covered casserole, put 1-2 Tb good quality olive oil and some salt & pepper. Add the boneless, skinless fish or chicken and turn to coat. Cover and bake in a preheated oven at 350 til done, for chickenbreast, about 45 minutes, for fish, 20-30 minutes depending on the thickness of the fish.
I serve with steamed veges and baked potatoe or a slice of whole grain bread. If you have a Trader Joes near you they have a great cooked organic brown rice that takes only three minutes to heat up in the microwave - this is also good, and easy, with this dish.
This simple recipe can be varied with any herbs or seasonings of your choice, adding lemon juice, a little wine, some garlic or onions. I sometimes add potatos or carrots cut into small pieces or other veges if it's chicken - but you'll cook it a bit longer.
If I'm doing this to salmon, I sometimes add a layer of sliced onion on top of the fish and a small handful of small spanish green olives and a pinch of tarragon.
Another favorite of mine from Trader Joes is their Tomato and Roasted Red Pepper soup - although you can do this with any tomato soup, and other soups as well. I add a Tb or two of basalmic vinegar to it after it's hot and then poach a couple eggs right in the soup. I like the leave the eggs whole and keep the yolk runny when I serve, but if you just stir it all up the eggs will cook completely and very quickly. This is great with whole grain bread and maybe a small salad.
I have another dish my friend and I invented that we call eggaritos, now my whole extended famliy makes these. Melt some cheese on tortillas and add scrambled eggs, tomatoe, lettuce, salsa, avacado, olives, sour cream or whatever suits you and eat like tacos or burritos. Fast and easy and all the kids in my family absolutely love them - they are a little messy to eat.
I also make meatloaf, usually two or three at a time, slice them up into single servings and freeze in ziplocks. Because they're cut before freezing the frozen slices separate easily so you can only unfreeze as much as you need. Mashed potatoes can be scooped with an ice cream scoop, frozen on a cookie sheet then put in ziplocks and also pulled out in single servings.
Hope you find something you like here. I live alone and don't like to spend a lot of time cooking for just me...so I have lots of easy or make ahead for leftovers meals I prepare...

Cheeseburger pie
1 pound of ground beef or turkey
1 cup of chopped up onions
2 cups of shredded cheddar cheese
half a cup of Bisquick biscuit mix
1 cup of milk
2 eggs
pinch of salt
Heat a large skillet on med high to brown the meat, onions, and salt. While the meat browns mix the biscuit mix, milk, and eggs with a mixer until smooth. Spray a 9' pie pan with cooking spray then add the meat mixture after u drain the fat. Sprinkle with cheese then add the biscuit mixture. Bake at 400 degrees for a bout 30 min. Or until cheese starts to brown a lil. Serve with mashed potates and corn! Serves about 5. This is a very delicious recipe so pass it on!

I also have 2 kids ages 9 and 5 and they love it.
Here are a few of the things
Chilli homemade (and the left over can be used to make chili dogs, my kids love that)
Roast Beef 'n Potatoes (can be made in a crockpot or while doing housework or what not)
Italian beef (it can be sinfully easy to make)
chicken pot pie (homemade)
I dont know I have loads of em. Dont give up some of the classics though.. Like Tacos.. you can change it around very easily.. One time have tacos.. next burritos.. next taco salad (sorta like an actual salad, more lettuce but even with the chips).. and then taco "stuff"
Taco stuff is a lot like nacho's.. you put down tortillia chips on plates, after the meat is done like normal just spread some on the chips and top with a cheese whiz type of cheese and top any way you want.. we use sour cream and just sauce.
Kids LOVE it cause they can eat their food with their fingers and there is a chance they can get a lil messy.. but it isnt bad and it is fun..

1/2 tsp. dried thyme leaves
2 cups frozen green peas
Directions:
SPRAY large skillet with cooking spray. Add mushrooms; cook on medium-high heat 5 min. or until tender, stirring occasionally.
ADD milk, water, Macaroni, ham and thyme. Bring to boil. Reduce heat to low; cover.
SIMMER 5 min., stirring occasionally. Add peas; cover. Simmer 5 min. or until macaroni is tender. Stir in Cheese Sauce until blended. Cover. Let stand 2 min. before serving
Beefy Pasta Skillet
Prep/Cook Time: 15 minutes
Serves: 4
Ingredients:
1 lb. ground beef
1 medium onion, chopped
1 can (10 3/4 oz.) Campbell's® Condensed Tomato Soup
1/4 cup water
1 tbsp. Worcestershire sauce
1/2 cup shredded Cheddar cheese
2 cups cooked corkscrew OR elbow pasta
Directions:
COOK beef and onion in skillet until browned. Pour off fat.
ADD soup, water, Worcestershire, cheese and pasta and heat through.

Cabbage rolls- my ma made em all the time when I was a kid and I loved them. You just brown ground beef and add in fresh shredded cabbage and let it cook till it's wilty, season it with salt pepper and mustard. then thaw some frozen bread dough and roll it out in little circles -as thick as you like- and make like a little calzone type thing and cook at 350 till golden brown. You can do everything up to the baking and freeze them to bake later. I always have some in my freezer for my boyfriend to make for his lunches. then just serve em with mustard or horseradish or whatever condiments you like!

Chicken with Sherry Vinegar Sauce:
Simple and luscious, this dish comes together in a hurry and only requires one pan. Pan-sautéed chicken, mashed potatoes, and green beans make a classic combination. Total time: 35 minutes.
4 (4-ounce) skinless, boneless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon butter
1 teaspoon olive oil
1/2 cup minced shallots
3/4 cup fat-free, less-sodium chicken broth
3 tablespoons sherry vinegar
2 tablespoons whipping cream
1 tablespoon chopped fresh parsley
Sprinkle chicken with salt and pepper. Heat the butter and oil in a large nonstick skillet over medium-high heat. Add chicken; cook 4 minutes on each side. Remove from pan; keep warm. Add shallots to pan; sauté 1 minute. Stir in chicken broth and vinegar, and cook 2 minutes. Add whipping cream; cook 1 minute. Serve sauce with the chicken. Sprinkle with parsley.

Mostaccioli with Spinach and Feta
INGREDIENTS
8 ounces penne pasta
2 tablespoons olive oil
3 cups chopped tomatoes
10 ounces fresh spinach, washed and chopped
1 clove garlic, minced
8 ounces tomato basil feta cheese
salt to taste
ground black pepper to taste
DIRECTIONS
Cook pasta according to package directions. Drain, and set aside.
Heat oil in a large pot. Add tomatoes, spinach, and garlic; cook and stir 2 minutes, or until spinach is wilted and mixture is thoroughly heated. Add pasta and cheese; cook 1 minute. Season to taste with salt and pepper.

well, if they like vegis( i doubt that) you could make stir-fry. i love that. just cut up some vegis and put a bit of olive oil on the frying pan and cook the vegis to how much you wuold like it to be cooked and add in noodles . you can add soy and terriaki sauce.
otherwise I don't know how to cook so that's all I can help you with
