pizza with ALL the veggies. I LOVE pizza and I would get pretty decent nutrition with the cheese and vegetables, plus I could pick things off to vary my diet a little when I get bored.

then the one thing would have to be something I concocted in the kitchen that included things like protein,carbos,dried fruit, honey,etc....in short, a food that would not only keep you happy but healthy.
Naturally, in the case of women anyway..it would have to also contain chocolate.
This could be a 'breakfast/lunch/dinner cookie...it's portable, it's small and can be carried easily, it's full of nutrients, it's delicious...and best of all, I have the recipe for it!!!

Carrots. They are my favorite snack. One thing like meal would be salad with eggs and bacon bits. man that would suck if you could only eat one thing for the rest of your life. White rice would be good too.
