Hi, does anyone know what I can use as a substitute for white wine in a pasta dish with white sauce?

I'm not trying to avoid using alcohol, but I just don't have the right kind on hand at the moment

Chicken stock works very well as a wine substitute - if you are adding salt to the dish, however, reduce the amount by about half, as commercial stock is quite salty

just use soda water or water or chicken/veggie broth or eliminate the step altogether if its the alcohol you object to (keep in mind all the alcohol burns off as you cook the sauce)

if you don't like the flavour, well it depends on what seasoning you're using in the sauce. if its a white sauce for clams or something try using Pernod - it has a lovely fennel flavour that complement seafood. In all honesty white wine is usually the best for a white sauce.

That's a tough one... I'm assuming you're trying to avoid the alcohol... so I'd suggest something like 'Ariel' which is an alcohol free (more or less...) white wine. Never actually drunk it, so not sure if it will work flavor wise, but it should.

Outside of that - if you don't care about the semi-bitter white wine taste, just compensate with a similar volume of water...

Sub for wine, well first of all why would you want to. HA!

You can use broth's or stock's, a low sodium low fat chicken stock would work alright. You may want to add a bit (Tbsp) of vinegar or lemon juice as an acid to give it a little kick, which is what the wine will additionally add.

Use chicken broth. Every recipe I've ever seen that calls for white wine says (or chicken broth) next to the wine in the ingredient list.
