Today I'm eating leftover Chinese food. I don't want to keep this up the rest of week, though. My goal isn't to become a piggy. Can you please give me a tasty, but not-so fattening bulk recipe which I can eat throughout the week? The more recipes, the better. :) Thank you!

For hot foods, various tomato-based recipes can work well... for example:

chili
spaghetti sauce
chicken "cacciatore"

You can vary these by serving over grain foods of some kind, or just a different grain than you had them with the first time (not just rice, pasta, couscous, etc. but also just on bread or toast open-face-satyle, or in a bun like a sloppy joe, or put them on a Boboli pizza crust and add some mozarella before baking).
You can also add more veggies or another type of meat or another herb/spice or a little wine, etc. to alter the flavor a bit for subsequent meals too.

Casseroles should last for a few days...some easy ones might be:

chicken and rice
tuna casserole

Stews are good too and there are lots of types.

Stir frys can have almost anything in them, and are good for using up leftovers too. Can use an ethic sauce from the store, or just add a little salt.


Supplement any of these with more veggies in the recipe, or served on the side (those little carrots in bags are a good and healthy accompaniment), esp. if they don't contain sufficient veggies for a whole meal by themselves.
And/or I also supplement with a piece of fruit (or canned fruit), and sometimes with whole grain toast or garlic bread, etc., or salad if I have any, if necessary. Add a glass of milk, and you're eating quite healthily.

I also like quickies from the grocery... just a few might be:

"sausages" of various types (I like the Butcher brand of Chicken and Apple ones at Safeway)... just grill and eat like a hot dog, or cut up and put into a can of baked beads (B&B brand?, Original style is a good one) or put into any other casserole or "glop" too

eggs (for full meal, make an omelet or frittata with veggies and maybe meat)

stir frys in bags

soups (make or buy)

I always try to alternate any leftover with other foods too, so I won't get too bored with the same thing.

P.S. For many recipes for most anything mentioned above, just do a web search using the word recipe plus whatever you'd like to have a recipe for... for example:

recipe tuna casserole

recipes stew beef chicken

recipe frittata

Eat Curry soup. It's only 70 calories and it's good for curing flus.

Recipe:

3 dashes of pepper powder
1 egg
2 dashes of curry
a dash of garlic
a dash of onion
1/4 cup of oil
1/4 cup of lemon juice
pepperoni (optional, but adds great taste)
2 cups of dipping sauce (optional, but adds great taste)


Mix all ingredients together in a cooking pan and mix and cook.
Pasteurize soup to make calories go down to 35 calories.
Take the gram of fat out to make calories go down to 20 calories.

Great with corn chips!

This is my favorite, from Cooking light. THey call it La Bamba casserole.

1 (5.25-ounce) can whole green chiles, drained
Cooking spray
1 pound ground turkey breast
1 cup chopped onion
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 garlic cloves, minced
1 (10-ounce) can diced tomatoes and green chiles, undrained
2 cups frozen whole-kernel corn, thawed
1 (16-ounce) can fat-free refried beans
1-1/2 cups (6 ounces) shredded cheddar cheese
1 cup chopped tomato
1/2 cup chopped green onions

INSTRUCTIONS
1. Preheat oven to 375 degrees.
2. Cut green chiles in half lengthwise. Arrange chiles in a single layer in an 8-inch square baking dish coated with cooking spray.
3. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add turkey, onion, chili powder, cumin, salt, and garlic; saute 5 minutes, stirring to crumble. Add diced tomatoes; cook 5 minutes or until liquid evaporates.
4. Spoon turkey mixture over chiles. Top with corn. Carefully spread beans over corn. Sprinkle cheese over beans. Bake at 375 degrees for 30 minutes. Let stand 5 minutes; top with chopped tomato and green onions.

Get some canned soups and fruits. I always eat that on my breaks. Never gain a pound.

You can try some grilled salmon with lemon and a pinch of pepper. accompany that with salad and/or pasta.
