All stores close down some time or another, so they need locks because they can't take the chance of somebody breaking in. Twenty-Four hour stores have to close down some time or another for special holidays such as Christmas or Thanksgiving...something like that.
Although it doesn't happen very much where I live, when there is a robbery they need to shut down the store for the police, as one person said before me. There may be emergencies to where they have to leave and it is very obvious when somebody is in a rush so they need locks. I hope this helps!

Because even 24-hour stores close sometimes. Sometimes, they might need to close if there is a crime there, or if there is a very bad storm. If they find some bad bacteria in their food, they'll have to close until they fix it. It is also for the safety of the employees and customers. If there is a maniac outside, those locks would come in handy.

Because the store is usually closed on Christmas day at least for a few hours. It is also because if there is a power outage or any other emergency that closes the store they can lock it.

I used to work in a convenience store. We would have to lock the doors for various reasons. We had long power outages, had a gas spill once. You never know what can happen.

I bet it is because it costs more to special-order doors with no locking mechanism. It's cheaper for the company (for example, Waffle House) to just buy the doors with locks then to have them specially made.
