Fluffy Pancakes
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/4 cup shortening, melted
In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown. Yield: 8 pancakes.

If you're a total beginner, start with a mix like Bisquick or Jiffy Baking mix or go for one of the so-called Pancake mixes like Aunt Jamima brand (I'd stick to Bisquick - it's much more versatile) Read and follow the easy directions.
Make the batter. Let it sit in the bowl for 5 minutes.
Pour 1/4 cup at a time onto a hot well greased griddle or frying pan. Wait till bubbles have opened on the top surface. (Be careful not to burn it...) then flip for a final few moments. Done!

INGREDIENTS

1 tablespoon vegetable oil
1 teaspoon margarine, softened
DIRECTIONS
In a bowl, stir together flour, sugar, salt and baking soda. In a separate large bowl, beat together eggs, milk, vanilla, vegetable oil and margarine. Stir dry ingredients into egg mixture; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Blueberry Buttermilk Pancakes:
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2 1/2 cups buttermilk
1/4 cup (1/8 lb.) butter or margarine, melted
1 cup fresh blueberries, rinsed and drained, or canned blueberries, drained (see notes)
Salad oil
1. In a bowl, mix flour, baking soda, baking powder, and salt. In a small bowl, whisk eggs, buttermilk, and butter until blended. Stir egg mixture into flour mixture, then gently stir in blueberries.
2. Place a nonstick griddle or a 12-inch nonstick frying pan over medium heat (350°). When hot, coat griddle lightly with oil and adjust heat to maintain temperature. Spoon batter in 1/3-cup portions onto griddle and cook until pancakes are browned on the bottom and edges begin to look dry, about 2 minutes; turn with a wide spatula and brown other sides, 1 1/2 to 2 minutes longer. Coat pan with more oil as necessary to cook remaining pancakes.
3. Serve pancakes as cooked, or keep warm in a single layer on baking sheets in a 200° oven for up to 15 minutes.
Yield: Makes about 20 pancakes; 5 to 6 servings

I usually just buy a box of the pre mixed stuff. Bisquick is a fav! I sometimes add vanilla extract and a bit of cinnamon to add flavor to my pancakes. The box directions are pretty self explanatory. You will know when its ready to flip when you see the bubbles on the edges of the pancake...oh and never flatten the pancake after you flip it, it will make it hard and less fluffy. Good luck, enjoy!

Buy a box of pancake mix follow directions on the side,add an egg whether it says so or not !

Mix together and pan fry it to nice golden brown
