You want to choose an oil with a high smoke-point. The smoke-point refers to the temperature at which the oil starts to break-down. You can tell when an oil/fat has reached this point when you see smoke coming from the pan. You don't want an oil that has a low smoke-point because when it starts to break-down, it will impart a bitter/rancid taste to whatever food is frying in it. So stay away from Olive Oil altogether. Some good oils/fats to go with are Peanut Oil, Corn Oil, Canola or Crisco shortening. Peanut, Corn & Canola Oil are better for deep-frying and Crisco Shortening is best for pan frying.
Oh, and make sure you have a thermometer to help regulate your cooking temperature.

Most restaurants use a solid fat like lard or Crisco that becomes liquid when heated, but you could use any oil. It should be at as high a temp as possible or about 375 F. Also if you are starting with a new batch of oil/grease you should put a very small amount of previously used oil in it as it will make the new oil brown the batter quicker. You should store the oil in a container in the frig if you are not using it daily (a coffee can is convenient) Don't believe all this unproven crap about cis and trans fats; at least until more research comes out, but fat is fat and it's best to moderate ones intake.

I use Canola, sorry you had such a nasty experience with it. The advantage to Canola is that it doesn't smoke or break down at high temperatures. You want to fry chicken at 375 fahrenheit. I would suggest that you get a deep frier with a thermostat control, they are not expensive and I get great results with mine. Happy Frying!

Canola oil is the healthiest of the frying oils. You shouldn't fry chicken in olive oil, the frying temperature will scortch olive oil.

It is a good idea to use the healthiest oil, but when doing alot of frying, especially deep frying, peanut oil is great. It produces great taste and even cooking. I do believe that most restaurants use vegetable oil.

hey you want good fried chicken. place a few pieces of raw onion in your grease and remove when dark brown. this keeps you chick from burning and adds flavor.

if its herbed chicken or stir fry i normally use olive oil
if its deep fried then i use vegetable or corn oil
and if its a curry i mix corn oil with some clarified butter
