I don't know if this is the "best recipe" for turkey but my family sure enjoys it. One thing I make for turkey leftovers is "Turkey Salad" ...Just take your turkey and cut it in small bites or shred it and place alittle pickle relish and onion if you so desire and herbs, salt and pepper to taste and spoon in some Mayo or we like Miracle Whip and stir it in and instead of chicken salad you have Turkey salad. It's really good. Another recipe you might want to think about is possibly a turkey casserole. It's simple and easy to make. Take your turkey and cut it in bite size pieces then get a can of either Campbells celery soup or mushroom soup and blend the ingredients together in a bowl with a can of milk. then take a package of chowmein noodles now you might want to use 3/4 of a bag depending on how much you are feeding.Now you can add onion if you wish it's optional.stir in the noodles,salt and pepper to taste and some herbs then place the mixture in a casserole dish. Sprinkle more chowmein noodles on top of the mixture, then either slices of velveeta cheese or shredded cheese over the noodles that you placed on top of the mixture then crumble some plain salted potato chips on top of the cheese. Bake at 350 for about 45 min to an hr or when the cheese has completely melted and the mixture has boiled.It's a good recipe and is a change from the Turkey dinners you have at the Holidays.

Then make turkey devil. This is a nice indian dish and is best served with djapartis, you can find the recipe by googling "turkey devil recipe".
Then you put the carcass into a soup and use it as a stock in a soup. This recipe should also be on the internet.

I do two things one is turkey and rice soup which is really easy.
I make stock from the bones of the turkey by cooking them very slowly in water with an onion and carrots in it. When it has simmered for a couple of hours I drain off the juice and save until I am ready to make the soup.
I cook the rice according to directions (do not use 5 minute rice) set aside
I take the stock and add onion, carrots and celery simmer until tender add turkey and the rice along with salt pepper and sometimes garlic. It is very tastey and easy.
The next one is easy too and uses a lot more of your left over veggies.
dice an onion and put in the bottom of a casserole dish add a layer of turkey potato and any veggie you want. mix and warm a can of cream of chicken soup (I used 3/4 can of water or milk instead of the full can.) spread over the casserole leaving some for the top. Add a layer of the stuffing and then the left over soup. Bake at 375 for about 20 minutes then I added some cheese on the top and baked another 5 minutes or so until the cheese was melted. My family loved it! I substitued sweet potato this year and got rave reviews. You can do about anything with turkey and some imagination. I used turkey for my tacos one year and made a turkey omlete and a taco bake with turkey. Good luck hope you find enough recipes to use up your left over turkey!

Take the carcass and all the meat and simply put in a huge pot. Cover with water and leftover broth. Bring to a boil and cook for about 4 hours. Remove meat, discard bones.
Pour broth into a container and put in refrigerator to completely cool. Fat will rise to the top and form a thick layer. Simply remove it with a spatula. Now the broth is fat free.

Make soup. Add cooked rice and some of the meat.

Make gravy from the broth by adding corn flour. Use toast and leftover meat for open faced turkey sandwiches.

Freeze remaining broth for soup in the dead of winter.

The best recipe my family has use after our holiday turkey would be,is to make a turkey salad after you just all stuff out with all of the other foods,you can just relax the rest of the week with turkey salad or turkey sandwiches. Then when all fells, just a good old turkey gumbo. Very inexpensive!

Turkey Hash.
Break up & mix together all the leftover turkey & stuffing with some diced onion.
Pour the rest of the gravy over that. If you don't have enough gravy you can make a little extra with a can of chicken broth.
Place a few rings of onion on top & bake until hot.
PS: This can be frozen. I made up my hash & froze in a big ziplock. When Christmas came I made a little extra gravy & baked. We just popped a bowl in the miocrowave whenever the munchies attacked! YUM! Then for Christmas dinner we had Roast Beast! :)

The best recipe is to take your turkey and boil it down, remove all bones. If you had a fresh vegie plate cut it up all of it including brocoli and coliflower. Add leftover stuffing and gravy, mashed potatoes, any sweet potatoes left, green beens, corn. All this combined makes the best soup you will ever taste after Turkey day!

The best recipe I have ever eaten that uses leftover turkey is Turkey Pot Pie. Pat out one sheet of Pillsbury frozen pie crust (partially thaw first - see directions) in a pie plate. In a large bowl, combine two cups chopped cooked turkey, one can cream of chicken soup, one half cup milk, a bag of frozen mixed vegetables (or a can of Veg-All) and mix thoroughly. Place second pie sheet on top of the filled pie and crimp the edges. Brush the top with melted butter, milk or egg whites. Sprinkle with Kosher salt. Bake at 375 degrees for 1 hour...yum!

"Jammin Turkey Quesadilla's"

Ingredients:
8 Tortilla Shells
1/4 of a Roasted Turkey
2 Cups Shredded Cheese
P.A.M. Spray or Butter Spray
Optional:
Green Peppers
Onions
Pepper/Salt
Sour Cream
Salsa

Method:
Spray pan with butter spray on low heat. Place torilla shell in pan and sprinkle cheese on it. Place second torilla shell on top and spray with butter . Allow bottom shell to turn golden brown. Flip it over and let second shell do the same. Place on plate and cut into trianglar wedges, like a pizza. Use desired condiments for flavor.
Yields: 4 servings
