im using my crock pot and usually it comes with the seasoning pack and this time i used a different beef that didnt. any suggestions?

All the seasoning pack consists of is pickling spice--bay leaf, peppercorns, mustard seed, red pepper flakes, whole cloves, coriander. You'll do just fine using just salt, pepper and bay leaf plus any or none of the remaining spices. Add some chopped onion and garlic if you like for a little more flavor.

It should be well spiced when you get it as it's been cured with a spiced brine solution for about a month. You can cook it in its bag in a microwave to get the flavor more concentrated, but it's saltier. You need to place the bag in a large bowl and cut some vent holes in bag, open the spice bag in it or add some pickling spices to it, bring to a boil and then cook it at a simmer for about 30 minutes. Do not let the the meat dry-up in the bag by cooking it too fast.

as others have said its just cured with pickling spice a trick my mom fought me is to boil the meat as usual w/ spice,garlic,and onion when done take out of water and put it between two plates or big/heavy cutting boards and use weight(books Sm.dumbbells ect..whatever)to press the meat at least 1 hour makes it really tender moist and easy to slice. while meat is pressing cook carrot,onion,potato,and quartered, cored cabbage in broth from meat
jiffy cornbread with a can of cream corn mixed in goes great as a side with this/ the sweet helps cut the cabbage
