I guess I don't slice or dice my potatoes. They work best when I cut them into wedges, season them with salt/pepper, garlic powder, oregano, lemon juice and olive oil. I toss that mixture around in a large bowl and place them on a jelly roll pan or casserole dish. Cover them up for the first 30-45 minutes at 350 degrees and take off the cover for the last 10-15 minutes so that they can get brown and a little toasty.

Dice or slice the potatoes, with or without the skin.
Put them in a ziploc or bowl.
Add olive oil and onion soup mix.
Mix well and place in a cooking sprayed baking dish.
Bake at 350 degrees.
Bake covered until potatoes are tender.
Uncover potatoes and let them brown.
Serve nice and hot.

I season mine with salt, pepper, basil, garlic, onion, a little sprinkle of sugar, and sometimes steak seasoning (depends on my mood..lol). Fry them in olive oil. They're a hit at my house.
