She used to live here...she just recently moved to Canada. We're grouping together, but we aren't sure what we're going to do to treat her...

Depends on what your friend is interested in.

Bringing him/her for dim sum is a must,
and shopping too.

For lower end shopping,
Mong Kok and Temple Street (Yau Ma Tei) aren't too bad,
for more "decent" shopping,
hit the shopping malls (e.g. Festival Walk, at Kowloon Tong),
Times Square (causeway bay).

Visiting the peak too would be good,
be it in the day or the night (the scenery there's great).

Stopping by the harbour is another suggestion,
and your friend can even look at the handprints on the avenue of stars. If you guys are there around 8pm, you'll even be able to catch the Symphony of Lights.

So many things. Apart from the shopping, you can go to various museums, walk the hills (surprisingly HK has much to offer in walking tracks), go to the Chinese border and shop for counterfeit goods (don't get caught by the police!).
