first you need to make coffee using your preffered method with coffee beans then remove the water usually by freeze drying and you are left with a powder that when mixed with water again you will have your 'instant' coffee.

1901: The first soluble "instant" coffee is invented by Japanese-American chemist Satori Kato of Chicago.
Instant is made by brewing a concentrated liquid solution of real coffee, then removing the water through various means of dehydration. What is left, the residue, is Instant. Early methods of dehydration involved spraying the concentrated solution into heated stainless steel drums and after the water had evaporated the drums were scraped and the powdery residue was packaged. The taste was scorched, pungent and bitter to say the least. If you have ever left a pot on the burner too long and have ended up with a charred disgusting mess in the bottom of the carafe, then you have made Instant Coffee.

haha, go out and buy coffee bags (satchets), throw one into a cup. and then add hot water.
wait for 2 minutes. Enjoy your coffee.
p/s: Be careful of the hot water! =D
Or, are you asking how they are made into the powdery form?
Then, that is because there are machines in the factory that grind the coffee beans into coffee granules/ powder and then they pack all these powder into small individual packets/ satchets and package them for selling in the supermarkets you will find them resting in. ;-)
