It depends on what you feel for her and what songs move you personally. There are literally thousands of really good songs.
One that I personally like among many others is John Denver's 'Annie's Song', but I realize that's not everyone's cup of tea.

songs that represent how u feel about her, or what is she for you, maybe she is your sunshine,
like that old old 98 degree, your my sunshine after the rain bla bla.

or even songs when your first date, first kiss etc.
or even bunch of lyrics from songs you combine it together as a letter or poem, it works. : )
