I worked in an Italian restaurant for 20 years. The best cheese for any pizza is aged mozzerella. The older the better. It tastes better and it melts better in the oven. mmmmmm, pizza!!!!!

well i have an italian family, my nan makes the best pizzas using parmassen nd mozzarella cheese. its really nice better then any other pizza i recon

Mozzerela Cheese is good but sometimes I ventuer out and try different cheeses you can buy really good cheeses at your farmer's market if you have one.

The proper cheese is Buffalo Mozarella. It's creamier and its the real mozarella.

I second 'buffalo mozzarella.'

And provolone.

Also good: Parmigiano-Reggiano. Old white cheddar. Plain old mozzarella. Feta, sometimes. Bocconcini.
