I was told holding ice in your hand until it melts can calm you, is this true?

It's thats what you like, sure.

Breaking ice against the floor is a really good way to deal with stress too

that's a neat question. I know when I have a headache, ice is all that helps the pain. I place an ice pack in a pillow case. it does seem calming to me, as long as it's not too cold.

it could be classified as therapeutic, I wouldn't like it, I don't like cold things on my skin. I would think though that it would start to hurt after a few seconds. Go try it :-)
