The ham comes from the rear leg. The whole ham consists of the butt and the shank cuts which are the top of the leg and the lower leg. Center cut slices come from, guess what, the center.
A picnic ham comes from the front shoulder of the pig.

My Grandfather was a butcher before he passed away. Ham comes from the butt. I used to work in my grandfathers store. He taught me alot about the meats and such.
