You can scramble a couple of eggs in less than 5 minutes. If you want something that takes even less time, take a couple of hard-boiled eggs. I also like the Snickers brand protein bars, but now my mind is going blank and I can't remember the name.... Anyway, they have a low-carb kind and a regular one, and pretty much any protein bar is going to have staying power for a few hours. But the taste will vary. Some of them are nasty, so don't buy a box of them until you've tried one.

Hard-boiled eggs. Lots of protein, and are easy to store in coolers for a long trip.
Mixed nuts and dried fruit is good also, but beware if you do not eat these regularly, may upset your stomach.
Sandwiches keep well, as does fresh fruit.
Whole wheat bagels are also tasty and good for you.

Bagels are quick and easy and if you have access to a microwave then Hot Pockets/Lean Pockets are super fast and convenient.

A crusty piece of whole wheat bread with peanut butter. I eat this all the time... it's fast, gives me energy, and who doesn't love peanut butter?
You could also do this with toasted english muffins.
