When I make salmon patties and fry them, they seem to come
apart. What should I do?

I use an egg and some corn meal..some people use an egg and flour...I guess it is just a personal choice.

Heres a good thing to do!
1. After making your patties (unbreaded) Freeze them for about 10 to 15 minutes.
2. Then Bread them in Flour then eggwash and finally in breadcrumbs or cornmeal.
3. Freeze them again for another 10-15 minutes
4. Fry Them

now of course yours could be too wet and in that case add more breading to the pattie mix

You might try adding another egg beaten with a little water, if they're falling apart it probably means your ingredients are too dry.


Salmon Patties
1 can salmon, bones removed
1 egg, beaten
1/4 onion, minced
1/2 sleeve saltines, crushed fine
1/2 tsp seasoning salt, garlic salt or cajun seasoning

In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.

When ever my mother made salmon patties, she would add a beaten egg and 2 tablespoons of cornmeal to the salmon .It works , try it the next time you cook up a batch.

I use saltines and 2 eggs. Make sure you let them brown on one side before turning them over or they do come apart. Have you tried making left over mashed potatoes with them. Put an egg with them and fry the same as the patties not turning them over too quick or they fall apart as well. You do need to add salt and pepper to the potatoes otherwise they are blah

I use eggs as a binder and chill the patties before frying.

all you need is a good binder,mix in a beaten egg & a little flour or corn flour,bread crumbs,or soak a slice of bread in milk or water,squeeze well & mix into the pattie mixture.I know of people adding a well mashed potato,but i think it changes the taste.Take your pick of one that is handy & you should have no further bother with patties.

mix cornmeal(enough to cover the salmon),some onions(chopped),1 egg, some crackers (amount varies by hand size) add salt & pepper to taste or whatever else seasoning you wish to add to the salmon. let the skillet heat up while making this mixture. this mixture is similar to what you would do when making a juicy meatloaf.

I think there is supposed to be eggs and bread or crackers crumbs in them as binders. Check some of the recipe websites.
