I just a new crockpot for x-mas and I want to make a chicken, rice and dumpling dinner, but I'm not sure how much water I need to add if any. Is there anyone out there who has experience with crockpots who could give me a little direction?

CHICKEN AND DUMPLINGS
4 boneless skinless chicken breasts, cut in small chunks
2 cans condensed cream of chicken soup
1/4 cup onion, finely diced
2 cups water
1 chicken bouillon cube
2 10 oz packages refrigerated biscuits
Combine all ingredients, except biscuits, in a crock pot. Cover and cook on low for 5 to 6 hours. 40 minutes before serving turn crock pot on high. Tear or cut biscuit dough into 1-inch pieces. Add to your crock pot; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through.

Some recipes don't come out well in a crockpot. Dumplings is probably one of them. If you really want dumplings and chicken, the best way for this is to BOIL and simmer the chicken on the stove in about 1 inch of water in a large 6 quart covered pot on the stove. Rinse chicken. Remove gizzards and neck and throw them away. Put chicken in pot and add about 1-2 inches of water. Bring to boil. Then slow cook on stove for about 2 hours. Check occasionally to make sure there is water in pot. When done, remove chicken, cool and de-bone it. Add a little salt to the water and use it for the dumplings. Dumplings: Use Bisquick and the recipe is usually on the BOX. Basically you make DOUGH like for biscuits....and then you add tablespoons ful to the boiling chicken broth. You can kind of flip them over with a spoon.. They need to cook for a few minutes in the boiling chicken broth.
You want all of your dumplings to be "floaters"...because "sinkers" (those that stay at the bottom of the pan are discards.)

I wouldn't add rice in it if I were you; just the chicken and dumplings and rice on the side.

I usually put enough liquid to cover the chicken and use half water half stock (or broth).

There should of been a cookbook in the box with your crockpot.

is this one of those frozen package meals? if so it should say on the directions .......if not i would say you will need about 6 to 7 cups of water....i hope it turns out sound delicious.....
