Depends on the size of the shallot.

Small ones probably 1/2 ounce each.

Large "banana" shallots probably 2 ounces each

Shallots float, which means they are lighter than water, so you will probably need a bit MORE than 2 Tablespoons to make one ounce.

It depends on the size of the shallot. Just chop it up and measure it. If you need 2oz, that will be about 2 tablespoons worth. (Remember, ounces can be measured in either weight or volume.)
