I just baked some persimmon cookies and thier to die for. Its the first time Ive made them. Is the inside supposed to be soft and fluffy or a little moist?

depends on how long you cook them. either way is fine, it is simply a preference.

the persimmon is a moist fruit. mine were soft but moist. I love them. since you like these, try looking for a box of Mincemeat in the grocery, it has a cookie reciep that is wonderful.I love that one too.
