Depends on how ambitious you are.

If you don't want to make the tortillas yourself, buy corn tortillas, they're best for tacos, in my opinion. We like ours soft, so we just heat them for about 10-15 seconds per side in a hot, ungreased skillet. You can also microwave them for 30-45 seconds, six at a time between two sheets of damp paper towel. Or follow package instructions.

For the filling, brown ground beef in a skillet, separating pieces into chunks about the size of the tip of your thumb. (My thumb, a small adult's thumb.) Drain off excess grease. Add one large onion, chopped. Sprinkle with lots of chili powder, some garlic powder and a bit of oregano, all to taste. Reduce heat and cover pan and let flavors develop. After 10 minutes or so, check seasonings and adjust. Repeat as necessary. If meat dries, add a couple of tablespoons of water, it'll steam away.

In the mean time, chop and place in separate bowls; tomatoes, green onions, lettuce, and avocados (sprinkled lightly with lime or lemon juice to keep from browning). Put out bowls of shredded Cheddar and Monterrey Jack cheese, sliced black olives, sour cream, salsa and/or taco sauce. (Or anything else you like for toppings. You can also season the cheeses with chili powder, if you like.)

Heat tortillas, and place in a warmer. Call your family/guests, and let them build their own soft shell tacos.

Oh, yeah, and if I have any meat left over, I just use it in Chili Con Carne. Other leftovers go into salads.

Well, it's easy, really. All I do is heat some soft flour tortilla in the oven for 10 minutes, then I cut an iceberg lettuce finely, and slice some tomatoes. Then I brown some beef or chicken mince in the fry pan with a little butter, adding a can of diced tomatoes, Mexican spices and salt. Cook the mince for about 15 or 20 minutes, then place all the ingredients on separate dishes and place on the table so your guests can help themselves. No problems!
Oh yeah, don't forget the guacamole and the sour cream! Oh, and the grated cheddar cheese!

America's Test Kitchen
They did an episode about tacos, quesadillas and salsa on Saturday not to long ago. Needless to say, I made tacos that night.

Go their website www.amerciastestkitchen.com and search for tacos. The best.
