If you want it really easy try this. Get a package of pre-shredded potatoes. There is a brand called Simply Potatoes available at my store.
Add 1/4 cup grated onion, two slightly beaten eggs, 1 tbsp flour and 1 tsp of salt and mix it all up.
Fry in a non-stick skillet until brown and flip and cook the other side.
Top with sour cream and applesauce.

The most important thing is to us the right grate size. Use the one which looks like a hole is punched trhoguh with the edges frayed.
6 poatoes peeled and grated (let sit in seive to drain water)
1-2 onions (grated same way)
1 egg
1tbs flour
salt and pepper to taste
after the potatoes have sat and drained water, pour it off but let the potato starch remain in the bowl, add all the rest of ingredients. Make sure olive oil is hot enough when putting in potato mixture, fry until golden brown flip and repeat- drain on paper towels and serve hot. My fav is with sour cream, others like apple sauce.

Grate potatoes either by hand or in a food processor -- so that it is grated into short thin strings. For every 4 potatoes grate one onion. Add 1 egg and one generous handful of cornflakes slightly crushed.
The cornflakes help bind the mixture together and add a nice, subtle sweetness.
Add salt and freshly ground black pepper.
Fry in 1 inch of oil.
Drain.
Serve with applesauce or sour cream.
