Scrub the potato you have picked out to eat. Make sure it is clean. Take a knife and poke a few holes in it, reaching to its middle.

Place in microwave for 5 minutes on high or if your microwave oven has a "baked potato" setting, use it. Check for desired doneness and serve if done.

Serve with anything you want :

Stab twice, deeply, with a fork, micro 4-6 minutes til soft (I usually bake small to med potatoes, big ones may take longer). Cut in half lengthwise. Score with a knife. Pour 1 or 2 ts cream into score marks, add fresh ground pepper and salt, cover with a generous slice of sharp cheddar cheese and microwave again til the cheese melts. You can also add just a little garlic powder or some chopped green onions with the salt and pepper under the cheese if you like. This is quick and easy and gets rave reviews from my guests.

if you like yours with peels, to get extra fiber.
boil 4 pounds red skinned potatoes for about 45 minutes. They need to be soft enough to be pierced by a tooth pick.
Drain potatoes. Then take a potatoe masher or electric mixer and whip up the potatoes. Add 1 big can of chicken broth. 1 cup low fat sour cream, 1 cup of real bacon bits, 1 tables spoon of salt, 1 teaspoon black pepper and blend it until well mixed. Heat it up again for 5 minutes on low fire.
Scoop into bowls. And top with gorgonzola cheese, sharp cheddar cheese, and a tables spoon of butter.
This tastes really good and fills everyone up. If you have 4 to 6 people. And if there are left overs, shape into patties, fry them in butter and serve for breakfast.

Microwave 'em. But poke them with a fork several times, to prevent exploding. I start them out at 8 minutes on High. But that depends on the size of the potato. Just have to experiment a little.

Wash them off, poke some holes in them, then microwave them for what ever the potato setting is. After they are soft from the microwave, bake them for about 5-10 minutes...that will make the outside crispy.
Top them with cheese, broccoli, bacon, sour cream, green onions...what ever you like. :)

OK - here is how I do it - take a potato -poke holes in it w/ a fork, rub it in butter put in foil, sprinkle salt on it then put it in the oven on 375* for about 25 minutes (or until you can stick a fork right through the foil into the potato) but even better, put in in the foil w/ the butter and salt then throw in on the grill until you can stick a fork through it. YUM...
