i am not too sure if she wants to make the whole dinner or something to offer at the dinner.
do you have the "stuff " or do you need to go shopping too???
something easy and fun is chocolate pretzels.
you need...salted pretzels (any size or shape)..and a bag for milk chololate chips...(not simi sweet)
very carefully melt the bag of chocolate...it can burn easy so stir often...it can also be melted in the microwave...caution..it will get hot!!
use wax paper or the non stick foil, line a cookie sheet...dip the pretzels in the melted chocolate and lay them on the paper (or foil). stick the whole sheet in the freezer..that sets the chololate so it is not melty skicky mess. after they are hard, put them in a bowl or on a plate. optional...you can also sprinkle with ice cream sprikles while the cholotate is still melted. makes a CUTE festive treat!!! and is sooooo easy!!!!
a relish tray is also nice!! she would need a divided tray or plate! she could cut up celery and carrots and put out olives and baby pickles..and what ever else you guys have, with ranch salad dressing for dip. that is easy and fun too....oh cheese...that is nice too.
gotta love cheese!! LOL
if she wants more of a real dish to serve...green bean caserole is easy. she needs a can or two of green beans...or a bag of frozen green beans....and a can of cream of mushroom soup. if you have the french onions in a can..those are nice to add to the top...but optional. mix the beans and the soup in a baking dish...bake at 350 for about say....15 minutes! it should be done!
if it is cold in the middle...cook for a little longer!
mashed potatoes or canned yams..both of thoses are yummy and easy.
for the potatoes...wash and cut the potatoes in little squares, boil them until they are soft...drain the water....use a mixer to mash them...add a little milk...maybe 1/4 cup milk and a half stick of butter...blend until fluffy....you can always add a little milk at a time to the texture that you like.
canned yams...cook them...drain them and mix them....if you have brown sugar...sprinkle some on the top..add a few mini marshmellows too (optional)
last one..deviled eggs.
boil eggs...how many ever you want. once they are hard boiled...peel eggs...rinse and slice in half.
put yellow yolks in a bowl. make the filling with the yolks...
add a small scoop of mustard, small scoop of mayo and a small scoop of relish (pickle) if you do not have relish...cut up a pickle- really finely diced!!! mix it all together with a fork..when well blended...taste (add more of what ever you think it needs) once you like the mixture....put filling back in to the eggs. if you have paprika you can add a light dash for color (paprika is red)
i can go on and on...i do hope that one of these helps you guys and you have a wonderful christmas!
Merry Christmas!!!!!!

Do you want sweet or savory? I'll give you something easy and savory. It is my mothers green beans, I always make them but at Christmas time the colors mean more. You need 2 cans of green beans, 1 can of chopped tomatoes, 1 chopped onion, 3 slices of bacon chopped. In a pot fry the bacon until slightly crisp. Remove the bacon and fry the onion until done. Add the green beans drained, and the tomatoes with liquid. Cook until heated through, then crumble bacon over the top. I hope I was some help.
