I refuse to answer unless I know what you are cooking....a drop of 75 degrees is not wise...so it depends on what the item is you are cooking.

It says 350 for a reason. Most meats for example won't get done in the middle at a temp as low as 275 unless you totally burn the outside and still may not get done in the middle no matter how long you leave it in there. The heat has to penetrate to cook through something and 275 ain't gonna do it.
